Living with partners who have different dietary needs has been quite the adventure for this Metis and Ukrainian woman. Picture me, attempting to transition to healthier cooking while still holding on to my love for all things gluten-laden. It’s like trying to dance the polka while wearing a suit of armor – definitely not an easy feat!

But hey, I’m not one to back down from a challenge. So, armed with determination and a blender, I set out to create my very own gluten-free flour. Rice and red lentils became my new best friends as I blended them into a powdery concoction that had the potential to transform into deliciousness.  I mean it took an hour and my sifting process made the kitchen look like a sandstorm hit us, but I’LL DO WHAT I NEED TO DO FOR HAPPY HEALTHY PARTNERS!!

Of course, it wasn’t smooth sailing from the get-go. There were some… let’s call them interesting experiments along the way. I may have created a few pancake-like discs that were as hard as hockey pucks, I call them the Saskatchewan gluten free Bannock, because that’s what home would use them for:  hockey!  Also they were pink because red lentils and white rice sifted together makes pink.  It’s basic colour theory!

Eventually, after some trial and error, I managed to achieve the desired consistency for my gluten-free Bannock. I won’t lie, I may have taken a detour from the healthier route by cooking it in bacon fat. But hey, life is all about finding that perfect balance, right? And what’s a little bacon fat among friends?

Living in a community has taught me the importance of compromise and shared goals. We all want to live longer, healthier lives, right? So, I’ve learned to adapt traditional recipes and make conscious choices. It’s a process, not a destination!
